Roasted Spiralized Carrot, Feta and Walnut Salad

Spread out vegetables on a large baking sheet lined with parchment paper. Roast in preheated oven 10 minutes. While vegetables are roasting, toast the walnuts in a skillet over medium heat 5 minutes, or until fragrant. To serve, place quinoa in a bowl. Top with vegetables, feta cheese and walnuts.
